In operation for more than two decades, Rigsby's Kitchen remains fresh by regularly offering new dishes -- typically with a Mediterranean influence. New items can be tough to manage for a successful restaurant that, over time, faces increasing pressure from longtime patrons to keep old favorites on the menu. As in politics, moving between the extremes of habit and novelty is tricky.
